San Francisco, April 23,
2007- Twenty-three leading producers of
DOC Prosecco, Italy's renowned sparkling
wine, will pour their latest vintage at
Vino in Villa San Francisco, on Thursday,
June 28 at The Fairmont Hotel, 950 Mason
Street in San Francisco, from 12:00 p.m.
to 5:00 p.m. The walk-around tasting is
open exclusively to food and beverage industry
professionals including wine retailers,
wholesalers, educators, and members of the
press. The tasting is being hosted by the
Consorzio per la Tutela del Vino Prosecco
di Conegliano-Valdobbiadene, whose mission
is to promote the development of viticultural
and oenological techniques, and the overall
quality of DOC Prosecco from the region
of Conegliano-Valdobbiadene. It is the first
DOC Prosecco tasting of this size to be
held by this organization on the west coast
of the United States. A similar tasting
will be held on June 26 in New York City.

DOC
Prosecco is the light sparkling wine produced
in Italy's Veneto region (about 50 kilometers
from Venice). It is made from Prosecco grapes,
which are hand-harvested and gently pressed
in special stainless steel tanks so that
only the free-run juice from the heart of
the grape is extracted. Vinification occurs
over just 15 to 20 days in stainless steel
vats where the juice is kept at a constant
cold temperature. Sparkling DOC Prosecco
is produced using the Charmat method, which
preserves the fruit and freshness of the
wine. From this process several types of
DOC Prosecco are created. The most renowned
DOC Proseccos are the sparkling brut and
extra dry styles, and the Superiore di Cartizze,
which comes from a sub-zone of that name.
DOC Prosecco is recognizable by its light
straw color and delicate fruity aroma and
flavor.
The
name of the event, Vino in Villa, is taken
from a three-day annual festival held during
the third weekend of May at the centuries-old
castle of S. Salvatore of Conte Collalto
in the Treviso region, and is attended by
over 12,000 members of the food and wine
industry and the general public. The 2007
Vino in Villa event will occur from May
18 to May 20.
The
Consorzio per la Tutela del Vino Prosecco
di Conegliano-Valdobbiadene seeks to promote
the development of viticultural and oenological
techniques, to guarantee and improve the
quality of DOC Prosecco, and to initiate
and support international education and
marketing opportunities for the DOC region.
In 1969, the Minister of Agriculture of
Italy officially recognized Conegliano-Valdobbiadene
as the only DOC production zone for Prosecco
and Prosecco Superiore di Cartizze.
